Hot asphalt sticks to a dry plate and tears the mat behind the machine. The MVC-88VTHW carries a water tank and a sprinkler bar so the plate stays wet through the pass, which is why it is the one specified for asphalt patching and footway surfacing rather than a general purpose plate.
